Mother’s Day Muffins

Mother’s Day is the perfect occasion to bake a sweet treat that shows your mom how much she means to you. These muffin recipes aren’t just delicious – they’re also healthy. And they’re easy for dads and kids to bake together. So give your mom a long overdue break from the kitchen, while you whip her up something special!

 

Cheese Muffins

1 c all-purpose flour (substitute: 1/2 cup whole wheat flour for an equal amount all-purpose flour)
1/2 c cornmeal
2 T sugar
2 t baking powder
3 ounces grated reduced cheese – either Cheddar or Swiss work nicely
3 T vegetable oil
2 eggs, beaten
1 c low-fat milk
1/2 c instant grits

Preheat oven to 400 degrees. Coat a 12-cup muffin tin with nonstick vegetable spray.

In a large bowl, mix until combined flour, cornmeal, sugar, baking powder, and grated cheese. In a smaller bowl, combine oil and eggs.

In a small saucepan, heat the milk until warm (being carefully not to scald it) and stir in the grits.

 

Using your finger or a wooden spoon, make a 3-4 inch well in the center of the flour mixture. Poor in the grits and milk and then the eggs mixture, stirring until just moistened. Do not overmix.

 

Spoon approximately 3/4 cup of batter into prepared tin. Bake for 20 to 25 minutes.
