DO NOT hold the blade down hard in the grinding position. Let the grinder do the work. Take your time, letting the knife slide easily toward you, using the #1 slot. My model 200-3 is pre-set for a precise 20°edge angle. Many, if not all newer knives now utilize the more narrowed sharpening edge of 15° that most Asian knives come with, right out of the factory. Newer models will come with that angle. The Trizor Hybrid model will either 15°, or 20° but is a bit more expensive. For the home gourmand, I doubt seriously that you could discern between the two edges. All of my blades are manufactured with German Solingen steel, and ALL are razor sharp at 20°, and I keep them that way. If you want knives like professional chefs use. Buy good knives, with superior steel. Then buy a ChefsChoice electric sharpener. My knives are sharper, with a longer lasting edge, than I was ever achieving with a triple stone manual device. This is the only electric sharpener that I trust my knives too. Blades will not overheat, and be damaged from heat from friction due to the materials. I trust the entire lineup of this brand.
