Many self-styled chefs, will stick to what people think, re/Oh, that's too spicy,it's not the case with special blends of spices, and techniques, that result in flavor. Mr. Prudhomme's love of serving others,results in fine restaurants, some dramatic flavor, some rich flavor, and some mild, but one thing is obvious, and that is, that these are real time tested recipes that I am proud to serve without modification.
