These Culinary Arts cookbooks series, while they Could be looked on as "hopeless period-pieces", need Not be! This series of cookbooks, taken as a whole, contain quite many tried-and-true recipes, which equally busy house-spouses will find equally important And beneficial to the running of their solo or family kitchens. Some of the auxiliary information is outdated, But, the recipes are very good overall. These recipes can be, at times, a little more daunting than they look at first, but cooks=chefs-in-mostly-at-home-training need not be, as a friend of our family who is a profeseuse PhD has said, "timid in the kitchen". Yes, this series of cookbooks-and, according to one's specific/general interests re that which one wants to cook, comes well-recommended.

I bought this older cookbook, used (Heck, it was published in 1988!) but recipes are timeless, aren't they? This cookbook has over 4700 recipes!!! It's a prior generation recipe textbook, from the Culinary Arts Institute and was at one time a young Chef's recipe reference. I just wanted it, to add so MANY recipes to my own reference collection. If I remember right, I paid, like, $3.99 for this great old book. That works out to about $0.00084/recipe. I'd say, that's damn good value, for the money! With things like books, if you're mainly interested in the content and not so much the appearance, you can really get great value out of buying used.

I recommend the Culinary Arts Institute Encyclopedia of Cooking. It is a good value and the content is compelling. I think any homemaker would love how creative the recipes are in this cookbook.
