This book is an instruction manual akin to Julia's Mastering the Art of French Cooking. It teaches one technique, history, and has fabulous recipes. Making my first pizza tomorrow!

I purchased this cookbook on a recommendation from my brother who has served some of the best handmade pasta dishes I have ever eaten. I love that the author educates and writes recipes simply and concisely. This cookbook goes into the different types of cooking in the different regions of Italy and explains that ‘Italian’ cooking is done in the home, because there is not a blanket description for the way Italian’s cook since regional styles are so different in even a short geographical distance. I personally can appreciate that since I am from southwest Louisiana and understand that due to the different cooking foundations and styles in Louisiana I.e Cajun vs Creole cooking and everything in between. The first recipe I chose I had everything on hand for already and although I did not hand-make my pasta(due to time constraints) I did use premium ‘made and packaged in Italy’ pasta. My two 70's vintage Hazan paperbacks Classic & More Classic are food-spattered & held together with tape from MUCH use over the decades. Having just found out they'd been combined (in the 90's, argh!) into this updated version along with some additional recipes, I couldn't resist. I salute the updatings...the classic ragu has gone from dabs of veggies, milk & wine to gobs, which, although it extends the time it takes to cook down, WAY improves the outcome. A very worthy addition to the other Hazan books in my cookbook library (the bookcase in my kitchen for most-frequently-used books, not the other three bookcases of cookbooks in my office down the hall!).
