the book is very detailed as expected. for the serious cook or baking person theres alot to learn and unlearn here. but at a glance type of baker its a hunt. the pictures used are a treat but i would like more photos of each cake and design. it has research and thats what makes it better than a Okay cake book.

This book has everything you need to know about cake baking. It also includes other recipes such as sweet breads, fillings, frostings, etc. The information is detailed and easy to understand. The directions are clear and consise, so it's like having a pastry chef in your kitchen to instruct you. There is much added information about ingredients and how they interact with each other. It includes a section on equipment and its use. It also includes large volume recipe's for wedding cakes as well as invaluable tips and preperation information. I love this book and have bought one for each of my daughters as well as for other family and friends.
I had this book for about ten years now but it finally gave out on me; you know the buttercream and chocolate on the pages etc. I knew that eventhough the book was well loved, it was time to replace it so I bought another one. I make the wedding cakes and celebration cakes for generations of our family (which is larger than most). I use this book to make the wedding cakes taste good. Many of them from bakeries taste crummy or are dry. This book is filled with tips, tricks, do's and don'ts. It isn't really for beginners a bit that I like about it. I don't have to go through instructions on whipping and folding or other novice instructions. There is nothing wrong with learning how to bake, but for those who already know that their baking rocks- this book will take your baking to another level. It's professional grade.Read full review
